Vegetable Salad Recipes

My favorite vegetable salad recipes are tomato mozzarella salad, spinach strawberry salad recipe, and our family recipe of mixed greens with tons of delicious ingredients.

The following recipe is the one that my husband and I made up over time. We just kept adding more and more ingredients to bring out great flavors and nutrients.



This salad is a typical dish that we are often encouraged to bring to family and church gatherings. As with any salad recipe, variations in amounts and ingredients can prove to be yummy as well. So, suit yourself! :)

We usually don't measure. I will put the higher quantity ingredients at the top. Use the "more or less" method when making your vegetable salad recipes.

Start with a good lettuce and greens. Choose loose leaf lettuce such as romaine, red/green leaf, or butter-head lettuce. Also, spinach, arugula, and other greens are superb ingredients.

These kinds are packed with nutrients. I do not recommend the iceberg "head" lettuce as it doesn't have many nutrients.

I occasionally use bagged, pre-washed salad greens if my time is limited or I want to give myself a break. But I usually buy the un-bagged greens. It's cheaper and may be less likely to contain bacteria.

We have recently begun growing lettuce indoors.

Big Family Mixed Green Salad Recipe

•Loose Leaf Lettuce (1 Whole bunch; Rinse, Tear/Cut)

•Spinach (1/2 bunch; Rinse, dry, cut/tear)

•Tomatoes (1-2 medium; Experiment with different types)

•Carrots (1/2 small bag of matchsticks or a couple grated carrots)

•Avocado (1)

•Red Onion (chopped up or in whole/half-rings to look pretty; Use a small amount or leave out if you're concerned about having bad breath afterward.) ;)

•Green Onion (A few sprigs, chopped)

•Black Olives (As desired, sliced or whole)

•Grated Parmesan Cheese (lightly coat the salad)

•Salt & Pepper (to taste; I usually just put some on the tomatoes and avocados before I stir them in.)

•Dressing (SMALL amount, don't make it swim. Start with 1/4 Cup of tasty dressing; stir and taste.)

Toss it all together

Top With: Several Pepperoncinis along the outside

I usually put an italian or olive oil-based dressing on it as part of the recipe. I've never heard a complaint yet. Or, you can let everyone choose from a selection of dressings.

Optional additions for vegetable salad recipes:

Cucumber, Boiled eggs (chopped), chunks of meat.

Make it healthier:

•Organic produce tastes better and has more nutrients.

•Grow your own vegetables. Starting a vegetable garden to supply ingredients for your vegetable garden recipes is rewarding both physically and emotionally!

I found growing green onions to be virtually effortless. I just buried some roots in the dirt and they grew like crazy. You just cut off as much as you want for the day and they grow back! Green onions and other vegetables can easily be grown indoors.
