Terrific Tomato Mozzarella Salad!
A tomato mozzarella salad (as in almost any salad) is flexible. I like to include spinach as at least 1/3 to 1/2 of the green base of my salads. Use pre-formed mozzarella balls from the store to make a nice display.
- 1/2 to 1 whole bunch loose leaf lettuce (Tear or cut)
- 1/2 bunch spinach (Tear or cut)
- 1-2 medium tomatoes or as many small tomatoes as desired (sliced as wedges, halved coins, or whole/halved grape/cherry tomatoes)
- Mozzarella balls (use as many as desired)
- 1 Small Can black olives (whole or sliced)
- 1/3 Cup almonds/walnuts (sliced, slivered, chopped, halved)
- Salt and pepper
- Your favorite dressing similar to Italian or other olive oil-based dressing (SMALL amount, don't make it swim. Start lightly and add slowly; stir and taste.)
Directions1. Rinse, dry, and cut or tear greens and tomatoes 2. Large bowl: Mix all ingredients together, hold back some mozzarella, tomatoes, olives, and nuts for final topping. Gently toss to coat the salad evenly. Enjoy! Try our other favorite vegetable salad recipes.
